The latest maximum fermentation zero oxidisation coffee processing innovation from Diego Bermudez, Antimaceration, offers up a Geisha at the extreme and a taste of the intense. 

The boundary-pushing team at El Paraíso start the Antimaceration process by cultivating, selectively growing, and handpicking only the very best geisha cherries. Once picked, cherries are sterilised with ozone before being placed inside a specialised vacuum chamber designed by Diego to start, what is essentially, the purest form of anaerobic fermentation – an environment without any gas.

Unlike most other anaerobic ferments where oxygen is displaced by the introduction of another gas (usually carbon dioxide from the fermenting fruit or a nitrogen addition), Diego creates a negative pressure environment with a vacuum pump that continuously pulls off all gases from the chamber over 60 days. While seemingly simple, the process is anything but and results in a few things happening: 

1. Liquid is drawn off the cherry creating a juice bath 

2. Pores of the coffee bean open up to absorb the cherry juice, locking in the geisha’s extracted flavour from the inside out

3. Zero oxidisation or flavour degradation

To further preserve the intense flavour profile, cherries are dried without heat, very quickly, using the Enigma dryer, Diego’s low-temp dehumidifier. 

Expect a cup experience that evolves and is never the quite the same twice – huge body, tropical aroma, mouthwatering acidity, and amplified fruit notes of guava, pineapple, marmalade & passionfruit, with unusual undertones of coconut, spice, and cola(!)

When will my order ship?

📆 All online orders are typically shipped on Wednesday each week to ensure we get the freshest available stock to you. This means anything ordered by midnight on Tuesday is guaranteed to ship on Wednesday, orders placed after this will ship by the following Wednesday at the latest. In some cases, items may ship sooner if we have fresh stock available.

🗺 Arrival depends on where you're based —within Johannesburg orders will often arrive the day after you receive tracking information, other major centres will usually receive orders 2 days after you get a tracking number in your inbox, outlying areas may take up to 3 days.

💫 We ship free to all of South Africa on orders over R799, for orders below this value a R70 delivery fee will be included at Checkout.

You can also opt for a store pickup at our Kramerville Roastery or Rosebank Cafe, just select this option at Checkout. We'll send you a "ready to collect" notification as soon as your order is, well, ready to collect.

 

🌍 We offer international shipping on orders under 2kg (weight includes packaging). For int'l shipping, vvv important to note is that no order greater than 2kgs will be accepted at checkout. Please reduce your shipment weight – a safe max is 6 boxes of coffee. If you happen to have your heart set on more coffee (!) then just abandon your cart with a note in the "special instructions for seller" window that asks us to raise a quote for shipping your order through to you and we'll get back to you with a cost ASAP.

Unfortunately, the South African postal service is infamous for being the total opposite of a vibe so our int'l shipping is handled via DHL Express Worldwide. This means int'l shippings fees are a little steep, but you will get your coffee in record time and will be able to track it all the way to your door.
