El Arbol Indigo Carbonic Macerated Natural Caturra, Nicaragua
The last time we featured the Amber carbonic macerated washed caturra from Sasa Sestic's El Arbol farm in Nicaragua it was a real standout of the year. So this time we've brought it back along with its natural CM sibling, Indigo.
Hugely aromatic, candy sweet. This is a fruit bomb with wine gums and passionfruit in the cup. Silky, delicious, and almost refreshing.
In the CM process, whole ripe cherry is cleaned and placed in stainless steel tanks flushed with carbon dioxide kept in a temperature and humidity controlled rooms. The managed fermentation and extended skin contact within this anaerobic environment allows for the amplification of fruit notes and body in the final cup.
