Norma Iris Fiallos Washed Maragogype, Copán, Honduras

No year would be complete without Norma dropping for a feature on our offer list.

Following a tough few harvests during the pandemic Norma and her team at Finca San Rafael didn't quite have enough yield to do the usual macerated natural maragogype we purchase. We went with her washed mara instead.

While not the monster we're used to this fully washed expression still brings big flavour. Malty biscuit, pear and herbal tea lead to a long finish of cocoa for cosy cups to get you through winter.
