Norma Iris Fiallos Red Catuai Macerated Natural, Copán, Honduras

Another release from one of our favourite producers, Norma Iris Fiallos. Not, the maragogype this time (though fresh crop of that is on its way!), this red catuai is offering loads of dark chocolate and cherry.

This lot has undergone a 90hr maceration giving it huge fragrance and cherry acidity. Espressos tastes like blocks of dark choc melting in your mouth and milk drinks move into bubblegum ice cream.
