This experimental lot from Rafael Amaya brings festive indulgence with huge desserty sweetness and rich flavour.
100% pink bourbon cherries are put through two 48-hr anaerobic fermentations either side of a 24-hr maceration in the presence of oxygen to amplify the intensity of just about every note in this lot.
Look out for big winey complexity, layered richness and smooth, juicy sweetness delivering notes of toffee, cacao, red apple, maraschino cherry, sweet vermouth and citrusy filters like Crepes Suzette.
