This lot is one of a pair of coffees that together make for our first-ever Geisha release.
But when you’re working with the queen of varietals it’s important to go completely over the top.
That’s why this isn’t just any Geisha. It isn’t just a meticulously processed washed Geisha from renowned Geisha producer, Jamison Savage, grown in the home of Geishas, Panama. Nope, this is Spectrum and like its natural sibling, Prism, it has undergone a unique carbonic maceration fermentation.
In this process, perfectly ripe coffee is hand-sorted, pulped, then placed in sealed, temperature-controlled tanks flushed with carbon dioxide. Within this anaerobic environment yeast production and the breakdown of sugar is carefully manipulated to build intensely sweet fruit characteristics and a rich mouthfeel in the cup.
This will be one of the most elegant coffees you'll taste all year. Expect a full bouquet of something fascinatingly floral—complex, layered sweetness with lime cordial, nectarine, jasmine tea, a vibrant passionfruit acidity, creamy texture, impossible balance, and an eternal finish.
